Breakfast was yogurt and blackberry parfaits with bunny grahams, along with biscuits with sausage gravy.
Lunch was pasta salad with grilled chicken, shrimp cocktail, and fruit salad. I had planned on deviled eggs (gotta use those Easter eggs). Unfortunately they were horrible to peel, so Scot called an audible and we went with open-face egg salad sandwiches on the biscuits that were left-over from breakfast. It ended up being a delicious last-minute substitution.
For dinner we stayed with a traditional Easter meal: ham, potato casserole, asparagus, orange rolls (you can get my Grandma's recipe here), and spinach salad with warm bacon dressing. I've got to say, everything was SO good!
I certainly can't take all the credit. Mom was a huge help with the rolls, Jess made the potatoes, and of course, Scot helped with a lot of the preparation too.
Jess was inspired by something she saw on Food Network (I love that the only time she watches that channel is while working out.) to make Coconut Cupcakes (from scratch) with cream cheese frosting. They were so yummy!
It was a great Easter, and I can't wait to do it again next year!
